Cauliflower, Coconut oil, Ginger, Turmeric Stew – Amazing!

This mouth-watering stew is ideal for both meat eaters and vegetarians. And, it is packed with healthy fat. Warm, pleasant, and comforting, it is a recipe the whole family can enjoy. For extra protein, add either chicken or tofu. If you are a fan of grains, feel free to combine it with wild rice.

Ingredients:

  • 2 tablespoons coconut oil
  • 1 teaspoon cumin seeds
  • 1 medium onion, finely chopped
  • 3 ripe tomatoes, finely chopped
  • 1 cup chopped kale
  • 1 medium head cauliflower, stemmed and cut into bite-size florets
  • 1 jalapeno, stemmed, seeded, chopped
  • 1 can full-fat, unsweetened coconut milk
  • 2 teaspoons ginger paste
  • 1 tablespoon cumin powder
  • 1 tablespoon coriander powder
  • 1 teaspoon turmeric powder
  • 2 tablespoons chopped cilantro
  • 1 teaspoon sea salt

Instructions:

  • Take a medium stock pot, add the coconut oil, and heat for thirty seconds on medium heat
  • Add the cumin seeds and stir for a while or until they begin to sputter
  • Add the onions and cook for a minute
  • Then, add the tomatoes, stir well and cook until the tomatoes soften
  • Add the rest of the ingredient and stir
  • Cover the pot and simmer for about fifteen minutes, stirring every five minutes
  • Divide the stew into four serving bowls
  • Enjoy!
